2005 "i baci" Pinot Grigio
Tasting Notes:
A lovely aromatic nose full of primary fruit characters reminiscent of peach, pear, and apple with fresh floral notes of orange blossom that lift from the glass. Additional spice and almond tones complete the nose and transcend into the palate. Steely acidity gives the wine life and delicacy. An intricate, complex finish completes the wine with a sense of freshness. An excellent wine with light fare including appetisers, poultry, seafood, young and light cheeses, and salads with a weak vinaigrette.

Harvest Data:
After 12 hours of skin contact to enhance varietal characters, the Niagara grapes were crushed, pressed and cold settled. Fermentation proceeded at an average 14°C in stainless steel using yeast designed for premium Pinot Grigio production. Post fermentation, the wine displayed excellent varietal character and was not put into oak or through malolactic to preserve this quality. Prior to bottling, the wine was blended with 99% Pinot Grigio from Fruili located in the north-east corner of Italy which is a cooler region somewhat similar to Niagara. This wine mirrored the Niagara fruit’s flavours with additional smoky, almond notes but with less acidity. The wine was bottled early to retain the fresh fruity and spice characteristics that make this wine distinctive.
