2005 "i baci" Rosso Dolce

TastingFresh and elegant Notes:
Sweet berry characters of cherry, raspberry and black currants fill the palate along with cassis.  Soft tannins add structure to the red wine and allow the wine to finish rich and soft.  It is an ideal wine for sipping on its own or with light meals.  This wine is also a great base wine for making Sangria in the summer or mulled red wine in the winter.

Harvest Data:
The grapes were immediately crushed after harvest and commenced fermentation.  The must was pumped over twice daily while the ferment continued at 20°C.  After 8 days, the wine was pressed and malolactic fermentation began.  The wine was not aged in oak to retain its light and fruity characters.  The wines were blended using four different bases to create the intensity desired then sweeten prior to bottling to sugar code 3 using a grape concentrate which also added berry fruit complexities and richer colour.
