Sparkling Riesling Icewine

Tasting Notes:
A bright golden colour with small, lazy effervescence, due to the viscosity, alludes to the dense yet elegant nature of Pillitteri Estates Winery's first Sparkling Icewine. Additionally, it is Niagara's first Sparkling Icewine to be vinified from Riesling. Nuances of fresh peach, apricots and aromatic flowers such as Freesia and Rose petals fill the glass while the palate displays overwhelming complexity of additional fruit and floral characters with an explosive mousse. It is the pinnacle of luxury as the sweet rich mouth feel of the wine transcends to delicacy due to the high yet balanced acidity giving the wine ability to pair well with any dessert and the ability to age. The extensively long finish is simply heavenly.


Production Notes :
The Icewine juice had 36.5ºBrix before fermentation. The lower sugar content present in this juice, in comparison to other Pillitteri Estates Winery Icewines which are typically >40˚Brix, is essential for the ease of fermentation under abnormal conditions. The fermentation proceeded in a stainless steel vessel that prevented the release of the carbon dioxide gas produced from the alcoholic fermentation hence forcing it into the wine. The result? A Method Cuvee Close / Sparkling Icewine full of effervescence bottled at 5 atmosphere pressure. The ferment proceeded for approximately 2 months at an average 15°C with specialized yeast. No additions, blending or fining occurred after ferment as the wine was simply perfect on its own. This wine will age beautifully for at least 10 years due to the high yet balanced acidity.

Harvest Data:
Harvesting the 2002 Riesling Icewine grapes was not as stressful as past years due to the abundance of cold weather in the winter of 2002 to 2003. The cold winter temperatures (-8°C minimum) required for Icewine arrived as early as December 02, 2002 and harvest was complete by January 18, 2003.
